Apple Lattice tart
Learning Intentions: To develop an understanding of how to and the purpose of blind baking when making an apple tart.
Success Criteria- I can spread the loading (rice, dried legumes, etc) over the baking paper, over the pastry and bake for 20 minutes.
Success Criteria- I understand that blind baking par-cooks the pastry and weighs it down so it doesn’t rise or get soggy.
Where did Apple pie originate from?
An apple pie is a fruit pie (or tart) in which the principal filling ingredient is apples. It is sometimes served with whipped cream or ice cream on top, or alongside cheddar cheese. Pastry is generally used top-and-bottom, making it a double-crust pie, the upper crust of which may be a circular shaped crust or a pastry lattice woven of strips; exceptions are deep-dish apple pie with a top crust only, and open-face Tarte Tatin. The origin of most customs and foods in America can be traced to Europe. The same is true of American Apple Pie - it is not really American at all! Fourteenth century English often enjoyed meat pies. Fruits such as apples were substituted in traditional meat pies and served as dessert. Apple pie was a favorite dessert during the reign of Elizabeth I. During the mid 1600s, Oliver Cromwell banned many pleasures throughout the Commonwealth, including pie. Fortunately under the reign of King Charles II in 1660 England enjoyed a more pleasant lifestyle, as the King allowed them many pleasures previously denied by Cromwell, among them pie. Tips and techniques:1. To remove the apple core, use a corer. this removes the middle of the apple (the core) and leaves a cylinder shape in the middle of the apple.
2. Loading (dried rice, legumes, peas, beans, etc.) is used to blind bake pastry. it weighs down the pastry and produces perfect sensory properties in this food item. 3. The lattice is a classic pattern used in old-fashioned pie making. it is used in this pie to enhance the physical properties of the food item. |
